Going vegan for Vegan Festival

On Sunday 13 November Whitmore Square will come alive with Vegan Festival from 10am - 5pm.

The tradition olde English Nut Roast

This one is one of my favourites at Christmas time. When I'm home for Christmas with my parents, I'll always request this to be put on the menu. There's nothing better than nut loaf. You can eat it hot or cold and it's great with a tomato salsa.

Savoury Nut Roast Recipe


Serves     6
Time to prepare     15 min preparation, 45-60 min cooking

Ingredients

  • 1 onion
  • 3 tbs vegetable oil
  • 2 small tomatoes
  • 30g or 1/4 cup wholewheat flour
  • 140ml or 2/3 cup water
  • 1 tbs soy sauce
  • 115g or 3/4 cup hazelnuts
  • 115g or 3/4 cup broken cashew nuts
  • 85g or 1 1/2 cups wholewheat breadcrumbs
  • 1 tsp dried mixed herbs
  • 30g or 1/4 cup soy flour

Method

  1. Chop the onion finely and saute it in the oil until tender.
  2. Skin and chop the tomatoes and add them to the pan. Cook for 5 minutes.
  3. Stir in the flour and slowly add the water, stirring constantly to avoid lumps. Remove from the heat.
  4. Grind the hazelnuts and add them to the sauce together with all the other ingredients. Mix very thoroughly and place in a bread tin or pie dish.
  5. Bake in a moderate oven at 350 F or 180 C (Gas mark 4) for 45 minutes to 1 hour.
