Cherry cake with cherry syrup and custard

 

 

This month's recipe comes from Meals on Wheels and was taste tested by one of our staff members during our recent visit to the Meals on Wheels kitchen in Mitcham.

 

 

 

Ingredients (for 12 pax)

  • 250g Self Raising Flour
  • 90g Sugar
  • 2 eggs
  • 250 mls Milk
  • 125g margarine
  • 350g cherries (tinned/drained or fresh)

Method

  1. Use mixer to combine flour, sugar, beaten eggs, milk and margarine together to form a batter
  2. Pour mixture into greased 20cm round/square cake tin, sprinkle drained cherries evenly over batter
  3. Bake in preheated 180C oven for approx 30-40 mins or until cooked.

Optional Syrup

If using tinned cherries, reserve the juice.
Place juice into sauce pan and bring to the boil, adding  up to 1 tsp sugar if sweetness is required, and use cornflour to thicken slightly.
Serve cake on top of custard (optional) and drizzle with syrup.

Alternatives: Apple or other fruit can be swapped for cherries.
