Healthy diet, healthy mind
Beyond Blue says that 'food can play a vital role in maintaining mental health as well as physical health.' I could not agree with this more heartily! When I eat the types of food that are listed in the eat most section of Nutrition Australia's healthy eating pyramid my brain is able to run my body on all cylinders. This month's recipe comes from me! It's straight out of my kitchen and is designed to give you the energy you need to get stuck into your day.
Porridge
Ingredients
- 1 cup of low fat soy milk
- A handful of oats (the bigger your hand, the more you'll probably need to eat)
- 1 banana, sliced (as a special treat)
- Sprinkling of chia seeds
- A drizzle of maple syrup or honey
Method
Pour the soy milk into a saucepan and heat it over a medium heat. When the soy milk has begun to warm up, tip in the oats. Stir continuously to make sure that the oats don't stick to the bottom of the saucepan. When the porridge starts to thicken, turn off the heat and put it in a bowl. Slice up a banana to go on top of the porridge, add a little more soy milk, sprinkle on some chia seeds and finally drizzle on some maple syrup or honey.
